A bold Santa Fe Salad packed with seasoned chicken, black beans, corn, avocado, and fresh greens with a zesty lime dressing.

Ingredients:
2 chicken breasts
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp garlic powder
Salt and black pepper
4 cups romaine lettuce
1 cup black beans, rinsed
1 cup corn kernels
1 cup cherry tomatoes, halved
1 avocado, diced
1/4 red onion, sliced
2 tbsp lime juice
2 tbsp olive oil (dressing)
1/4 cup Greek yogurt or mayo

Instructions

Instructions:

  1. Season chicken with spices.
  2. Cook chicken in olive oil until golden.
  3. Rest and slice chicken.
  4. Prepare lettuce, beans, corn, and vegetables.
  5. Mix dressing ingredients.
  6. Assemble salad base.
  7. Add sliced chicken.
  8. Drizzle dressing over salad.
  9. Top with avocado and serve.
