Pizza Eggs is a baked skillet dish combining eggs, tomato sauce, herbs, and melted cheese for a comforting pizza-inspired meal.

Ingredients

4 large eggs
1 cup crushed tomatoes or marinara sauce
1 tablespoon olive oil
2 cloves garlic, minced
1/2 small onion, finely chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1/2 small bell pepper, sliced (optional)
1/4 cup sliced mushrooms (optional)
68 black olives, sliced (optional)
Fresh basil leaves

Instructions

  • Heat olive oil in skillet and cook onion until soft.
  • Add garlic and cook briefly.
  • Stir in tomato sauce and simmer.
  • Add herbs, salt, pepper, and optional vegetables.
  • Create wells and crack eggs into sauce.
  • Top with cheese.
  • Bake at 375°F for 10–15 minutes.
  • Rest and garnish with basil.
