Peri Peri Chicken & Rice is a spicy one-pot meal made with marinated chicken, fluffy rice, and bold peri peri seasoning.

Ingredients

2 cups basmati rice
4 chicken pieces
2 tbsp peri peri seasoning
2 tbsp olive oil
1 tbsp lemon juice
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1 onion
3 cloves garlic
1 bell pepper
3 cups chicken broth
Fresh herbs

Instructions

  1. Marinate chicken with spices.
  2. Sear chicken in a pan.
  3. Sauté onion, garlic, and pepper.
  4. Add rice and broth.
  5. Place chicken on top and cook covered.
  6. Rest, fluff, and serve.
