Lemon Crumb Bars feature a buttery crust, a bright lemon filling, and a golden crumb topping baked into perfectly sliceable squares.

Ingredients

2 cups all-purpose flour
1 half cup granulated sugar for crust
1 quarter teaspoon salt
1 cup unsalted butter cold and cubed
2 large eggs
1 cup granulated sugar for filling
1 third cup fresh lemon juice
1 tablespoon lemon zest
2 tablespoons all-purpose flour for filling
Powdered sugar for dusting optional

Instructions

  • Preheat oven to 350 degrees Fahrenheit and line an 8×8-inch pan with parchment paper.

  • Combine flour, sugar, and salt. Cut in butter until crumbly.

  • Reserve 1 cup of crumbs and press remaining into pan.

  • Bake crust 15 minutes until lightly golden.

  • Whisk eggs, sugar, lemon juice, zest, and flour.

  • Pour filling over warm crust.

  • Sprinkle reserved crumbs on top.

  • Bake 20 to 25 minutes until set and lightly golden.

  • Cool completely, refrigerate, and dust with powdered sugar before slicing.

Notes

Use fresh lemon juice for best flavor. Chill before slicing for clean edges.
