A dense and nourishing flourless oat and chia bread made with simple ingredients for a healthy gluten-free homemade loaf.

Ingredients

2 cups rolled oats
1/3 cup chia seeds
2 eggs or 2 flax eggs
1 cup plant-based milk
2 tbsp olive oil or coconut oil
1 tbsp maple syrup (optional)
1 tsp baking powder
1/2 tsp salt

Instructions

  1. Preheat oven and prepare loaf pan.
  2. Mix oats and chia seeds in a bowl.
  3. Whisk wet ingredients in a separate bowl.
  4. Combine wet and dry mixtures.
  5. Let batter rest for 10–15 minutes.
  6. Stir and pour into loaf pan.
  7. Bake until firm and golden.
  8. Cool completely before slicing.

Let bread cool fully for clean slices. Store in fridge or freeze for longer freshness.
