Easy Rice Salad is a fresh and colorful mix of rice, vegetables, and a light lemon dressing perfect for quick meals or meal prep.

Ingredients

2 cups cooked rice
1 cup cucumber
1 cup cherry tomatoes
1/2 red bell pepper
1/4 red onion
1/2 cup corn
1/2 cup chickpeas
2 tbsp parsley
3 tbsp olive oil
2 tbsp lemon juice

1/4 tsp black pepper
1/2 tsp oregano

Instructions

  1. Cool cooked rice completely.
  2. Add rice to a large bowl.
  3. Chop and add vegetables.
  4. Mix gently with rice.

  6. Pour dressing over salad.
  7. Toss lightly to coat.
