Soft and chewy gluten free breakfast bars made with oats, banana, nut butter, and seeds for a healthy and easy morning snack.

Ingredients

2 cups gluten-free oats
2 ripe bananas, mashed (or 3/4 cup applesauce)
1/2 cup nut butter
1/4 cup honey or maple syrup
2 eggs or 2 flax eggs
1/4 cup chia seeds or flaxseeds
1/2 cup dried fruit
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt

Instructions

  • Preheat oven and line baking pan.
  • Mix mashed banana, nut butter, and sweetener.
  • Add eggs or flax eggs and mix well.
  • Combine oats, seeds, cinnamon, and salt.
  • Mix dry and wet ingredients together.
  • Fold in dried fruit.
  • Press mixture into pan evenly.
  • Bake until set and golden.
  • Cool completely and slice into bars.

Notes

Cool fully before cutting for best texture. Store in fridge for freshness. Freeze for longer storage.
