Ingredients

1.5 lb chicken
2 tbsp olive oil
3 tbsp butter
4 garlic cloves
1 cup chicken broth
1 cup heavy cream
1 tsp thyme
1 tsp parsley
2 lb potatoes
1/2 cup milk
1 lb carrots
2 tbsp honey
Salt and pepper

Instructions

  1. Boil and mash potatoes with butter and milk.
  2. Cook carrots with butter and honey.
  3. Sear chicken until golden.
  4. Make creamy herb sauce in same pan.
  5. Return chicken and simmer.
  6. Plate with potatoes and carrots.
