A cheesy, beefy, crunchy casserole inspired by the classic walking taco, layered with seasoned ground beef, refried beans, sour cream, cheese, and nacho cheese Doritos. Perfect for family dinners or parties.
1 lb ground beef
1 packet taco seasoning
1/3 cup water
1 can refried beans (15 oz)
1 cup canned corn, drained
3/4 cup sour cream
2 cups shredded cheddar cheese
4 cups crushed nacho cheese Doritos (divided)
Optional toppings: diced tomatoes, lettuce, jalapeños, olives, avocado, green onions
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Brown ground beef in a skillet over medium heat (7–8 minutes). Drain grease.
Add taco seasoning and water. Simmer 2–3 minutes.
Stir in refried beans and corn. Heat through.
Spread half of the crushed Doritos in the bottom of the baking dish.
Spoon beef mixture over the chips.
Spread sour cream on top of beef layer.
Sprinkle shredded cheese evenly over sour cream.
Top with remaining crushed Doritos.
Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
Cool for 5 minutes before serving. Garnish with optional toppings.
