These easy Mississippi Pot Roast Sliders combine slow-cooked beef, pepperoncini, and butter into an irresistibly juicy filling, finished with cheese on slider rolls. Just five ingredients and minimal prep deliver a flavorful dish perfect for any occasion.
3–4 lb chuck roast
1 packet ranch dressing mix
1 packet au jus gravy mix
½ cup unsalted butter, sliced
6–8 whole pepperoncini + 2 tbsp brine
12 slider buns
6 slices provolone cheese
1 tbsp melted butter (optional)
Pat chuck roast dry and place in slow cooker.
Sprinkle ranch and au jus seasonings over meat.
Add butter slices, pepperoncini, and brine.
Cover and cook on LOW for 8 hours or HIGH for 4–5.
Shred meat and stir back into juices. Rest uncovered 15–20 minutes.
Preheat oven to 350°F.
Slice slider rolls and layer bottoms in a baking dish.
Top with shredded meat and cheese slices.
Add bun tops and brush with melted butter if using.
