Ingredients

  • lbs boneless chicken thighs or breasts

  • ½ cup Greek yogurt

  • 2 tbsp olive oil

  • Juice from ½ lemon

  • 1 tsp paprika

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • ¼ tsp cayenne pepper

  • Salt and black pepper to taste

  • 4 large tortillas

  • 1 cup romaine lettuce, chopped

  • 1 tomato, sliced

  • ½ cucumber, thinly sliced

  • ¼ red onion, sliced

  • Optional sauces: garlic yogurt, chipotle mayo, or hummus

Instructions

  • Mix marinade ingredients and coat chicken. Chill for 30 minutes or more.

  • Grill chicken until golden and cooked through. Rest, then slice.

  • Prep vegetables while chicken cools.

  • Warm tortillas and spread your sauce.

  • Add sliced chicken and vegetables.
