1½ lbs boneless chicken thighs or breasts
½ cup Greek yogurt
2 tbsp olive oil
Juice from ½ lemon
1 tsp paprika
1 tsp chili powder
½ tsp cumin
½ tsp garlic powder
¼ tsp cayenne pepper
Salt and black pepper to taste
4 large tortillas
1 cup romaine lettuce, chopped
1 tomato, sliced
½ cucumber, thinly sliced
¼ red onion, sliced
Optional sauces: garlic yogurt, chipotle mayo, or hummus
Mix marinade ingredients and coat chicken. Chill for 30 minutes or more.
Grill chicken until golden and cooked through. Rest, then slice.
Prep vegetables while chicken cools.
Warm tortillas and spread your sauce.
