Ingredients

  • 2 lbs boneless skinless chicken thighs or breasts

  • 1 cup long-grain white rice

  • 2½ cups chicken broth

  • 1 lemon (zest + juice)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme (or ½ tsp dried)

  • ½ tsp rosemary (optional)

  • ½ tsp salt

  • ¼ tsp pepper

  • 2 tbsp chopped fresh parsley

  • 1 tbsp olive oil or butter (optional for richness)

Instructions

  • Optional) Sear chicken in oil for 2–3 min per side. Transfer to slow cooker.

  • Add rice, onion, garlic, lemon zest, herbs, salt, and pepper. Stir lightly.

  • Pour in broth and lemon juice. Cover and cook on low 3½–4 hours or high 2–2½ hours.

  • Fluff rice, stir in parsley and butter (if using). Adjust seasoning to taste.
