1½–2 lbs boneless skinless chicken thighs or breasts
1 cup long-grain white rice
2½ cups chicken broth
1 lemon (zest + juice)
1 small onion, diced
2 cloves garlic, minced
1 tsp fresh thyme (or ½ tsp dried)
½ tsp rosemary (optional)
½ tsp salt
¼ tsp pepper
2 tbsp chopped fresh parsley
1 tbsp olive oil or butter (optional for richness)
Optional) Sear chicken in oil for 2–3 min per side. Transfer to slow cooker.
Add rice, onion, garlic, lemon zest, herbs, salt, and pepper. Stir lightly.
Pour in broth and lemon juice. Cover and cook on low 3½–4 hours or high 2–2½ hours.
Fluff rice, stir in parsley and butter (if using). Adjust seasoning to taste.
