1.5 lbs boneless skinless chicken thighs
4 medium Yukon Gold potatoes, chopped
3 carrots, sliced thick
2 celery stalks, chopped
1 yellow onion, diced
3 garlic cloves, minced
2 tablespoons tomato paste
4 cups low-sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and pepper to taste
1 cup frozen peas
2 tablespoons flour or cornstarch (optional, for thickening)
Optional: Brown chicken and sauté onion/garlic in a skillet for added flavor.
Layer potatoes, carrots, and celery in the bottom of slow cooker.
Add chicken on top. Then onion, garlic, tomato paste, herbs, salt, and pepper.
Pour in chicken broth until everything is just covered.
Cook on low for 7–8 hours or high for 4–5 hours.
Optional: In last 30 minutes, stir in a flour or cornstarch slurry to thicken.
Add peas during final 10–15 minutes.
Adjust seasoning and serve hot.
