This Slow Cooker Chicken Stew is a hearty, one-pot meal full of tender chicken, vegetables, and savory herbs simmered to comforting perfection.

Ingredients

  • 1.5 lbs boneless skinless chicken thighs, cut into chunks

  • 4 medium Yukon Gold potatoes, diced

  • 3 large carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 1 medium yellow onion, chopped

  • 3 cloves garlic, minced

  • 2 tbsp tomato paste

  • 4 cups low-sodium chicken broth

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried thyme

  • ½ tsp dried rosemary

  • 1 tsp paprika

  • 2 bay leaves

  • Optional: 2 tbsp cornstarch + 3 tbsp water (for thickening)

  • Optional garnish: chopped parsley

Instructions

  1. Add potatoes, carrots, celery, and onion to the bottom of the slow cooker.

  2. Layer chicken on top and sprinkle with garlic, salt, pepper, thyme, rosemary, and paprika.

  3. Add tomato paste and pour in the chicken broth to just cover the ingredients.

  4. Add bay leaves, cover, and cook on low for 6–7 hours or high for 3–4 hours.

  5. For a thicker stew, stir in the cornstarch slurry during the last 30 minutes and cook uncovered.

  6. Remove bay leaves, taste and adjust seasoning, then serve hot with fresh parsley.
