Slow Cooker Beef Stew is a tender beef and vegetable stew simmered slowly in a rich, savory broth for a comforting family meal.
2 pounds beef chuck cut into 1 1/2-inch cubes
1 medium yellow onion chopped
3 cloves garlic minced
3 carrots sliced
1 1/2 pounds Yukon Gold potatoes cubed
3 cups beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons cold water
Brown beef in a skillet if desired and transfer to slow cooker.
Add onion, garlic, carrots, and potatoes.
Whisk broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
Pour mixture over ingredients and add bay leaf.
Cook on low 7 to 8 hours or high 4 to 5 hours.
Mix cornstarch and water and stir into stew 30 minutes before serving.
Remove bay leaf and adjust seasoning before serving.
