Slow Cooker Beef Stew is a tender beef and vegetable stew simmered slowly in a rich, savory broth for a comforting family meal.

2 pounds beef chuck cut into 1 1/2-inch cubes
1 medium yellow onion chopped
3 cloves garlic minced
3 carrots sliced
1 1/2 pounds Yukon Gold potatoes cubed
3 cups beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons cold water

Instructions

  • Brown beef in a skillet if desired and transfer to slow cooker.

  • Add onion, garlic, carrots, and potatoes.

  • Whisk broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.

  • Pour mixture over ingredients and add bay leaf.

  • Cook on low 7 to 8 hours or high 4 to 5 hours.

  • Mix cornstarch and water and stir into stew 30 minutes before serving.

  • Remove bay leaf and adjust seasoning before serving.
