A hearty and creamy Italian-style soup with savory sausage, tender potatoes, garlic, and herbs. Comforting and easy to make in one pot.
1 lb Italian sausage
1 tbsp olive oil
1 yellow onion, chopped
3 cloves garlic, minced
4–5 cups Yukon gold or red potatoes, diced
4 cups chicken broth
1 tsp Italian seasoning
Salt and pepper to taste
½–1 cup heavy cream or half & half
Optional: 2 cups chopped kale or spinach
Optional toppings: grated Parmesan, parsley
In a large pot, heat olive oil. Brown sausage and set aside.
In same pot, sauté onion and garlic until soft.
Add potatoes, broth, Italian seasoning, salt, and pepper. Bring to boil, then simmer 15–20 mins.
Return sausage to pot. Stir in cream and simmer 5–7 mins more.
Add greens if using and cook until wilted.
Serve hot with Parmesan and fresh herbs.
