A hearty and creamy Italian-style soup with savory sausage, tender potatoes, garlic, and herbs. Comforting and easy to make in one pot.

Ingredients

  • 1 lb Italian sausage

  • 1 tbsp olive oil

  • 1 yellow onion, chopped

  • 3 cloves garlic, minced

  • 45 cups Yukon gold or red potatoes, diced

  • 4 cups chicken broth

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • ½1 cup heavy cream or half & half

  • Optional: 2 cups chopped kale or spinach

  • Optional toppings: grated Parmesan, parsley

Instructions

  • In a large pot, heat olive oil. Brown sausage and set aside.

  • In same pot, sauté onion and garlic until soft.

  • Add potatoes, broth, Italian seasoning, salt, and pepper. Bring to boil, then simmer 15–20 mins.

  • Return sausage to pot. Stir in cream and simmer 5–7 mins more.

  • Add greens if using and cook until wilted.

  • Serve hot with Parmesan and fresh herbs.
