  • 23 medium sweet potatoes, sliced into ½-inch rounds

  • 2 tbsp olive oil

  • Salt and black pepper to taste

  • ½ cup crumbled feta cheese

  • 23 tbsp honey

  • Optional: fresh parsley or thyme for garnish

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment.

  • Toss sweet potato rounds with olive oil, salt, and pepper.

  • Arrange in a single layer and roast 20 minutes. Flip and roast 15–20 more minutes until tender and golden.

  • Remove from oven and sprinkle warm rounds with crumbled feta.

  • Drizzle with honey and garnish with fresh herbs. Serve warm or at room temperature.
