2–3 medium sweet potatoes, sliced into ½-inch rounds
2 tbsp olive oil
Salt and black pepper to taste
½ cup crumbled feta cheese
2–3 tbsp honey
Optional: fresh parsley or thyme for garnish
Preheat oven to 400°F. Line a baking sheet with parchment.
Toss sweet potato rounds with olive oil, salt, and pepper.
Arrange in a single layer and roast 20 minutes. Flip and roast 15–20 more minutes until tender and golden.
Remove from oven and sprinkle warm rounds with crumbled feta.
Drizzle with honey and garnish with fresh herbs. Serve warm or at room temperature.
