This quick and easy Butter Chicken features tender chicken in a rich, spiced tomato-cream sauce — all made in one pan and ready in under 40 minutes.

For the Chicken:

  • lbs boneless chicken thighs or breasts, cut into pieces

  • ½ cup plain yogurt

  • 1 tbsp lemon juice

  • 1 tsp garlic paste

  • 1 tsp ginger paste

  • 1 tsp garam masala

  • ½ tsp turmeric

  • ½ tsp chili powder

  • ½ tsp salt

For the Sauce:

  • 3 tbsp butter (divided)

  • 1 tbsp neutral oil

  • 1 onion, finely chopped

  • 2 tsp garlic paste

  • 1 tsp ginger paste

  • 1½ tsp garam masala

  • 1 tsp cumin

  • ½ tsp chili powder

  • 1½ cups tomato puree

  • ¾ cup heavy cream

  • 1 tsp crushed fenugreek leaves (optional)

  • Salt, to taste

Instructions

  • Marinate chicken with yogurt, lemon juice, garlic, ginger, and spices. Rest 15–30 minutes.

  • In a skillet, sear chicken in butter and oil until golden and cooked through. Set aside.

  • Sauté onion in remaining butter until golden. Add garlic, ginger, and spices.

  • Stir in tomato puree. Simmer 5–7 minutes.

  • Add cream, chicken, and fenugreek. Simmer another 5–10 minutes.

  • Garnish with cilantro and serve with rice or naan.
