A bold, flavorful one-pot dinner with Cajun-spiced chicken, fluffy rice, peppers, and garlic — all simmered together for a comforting Southern-inspired meal.
1½ lbs boneless, skinless chicken thighs or breasts
2 tbsp Cajun seasoning
2 tbsp olive oil
1 small onion, diced
2 bell peppers, diced
3 cloves garlic, minced
1 tbsp tomato paste (optional)
1½ cups long grain white rice
3 cups chicken broth (low-sodium)
Salt & pepper, to taste
Fresh parsley or green onions, for garnish
Season chicken with Cajun seasoning. Heat oil in skillet and sear chicken 3–4 minutes per side. Remove and set aside.
In same pan, sauté onion, peppers, and garlic 3–5 minutes. Stir in tomato paste and cook 1 minute.
Add rice and broth. Scrape pan bottom and bring to a boil.
Return chicken to skillet, cover, and reduce heat to low. Simmer 20–25 minutes.
Remove from heat and let rest 5 minutes. Fluff rice and garnish before serving.
