  • 1 lb ground beef, turkey, or pork

  • 1 tbsp olive oil (if using lean meat)

  • 1 yellow onion, diced

  • 3 cloves garlic, minced

  • 4 medium Yukon Gold potatoes, thinly sliced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • ½ tsp dried thyme

  • 1 ½ cups chicken or beef broth (low sodium)

  • ½ cup heavy cream or half-and-half

  • ½ cup shredded cheddar or mozzarella (optional)

  • 1 tsp Dijon mustard (optional)

  • Fresh parsley, chopped (for garnish)

Instructions

  • In a large skillet, brown the ground meat over medium heat. Drain excess fat.

  • Add onion and sauté until soft. Stir in garlic and cook for 30 seconds.

  • Add sliced potatoes, salt, pepper, paprika, and thyme. Toss to coat.

  • Pour in broth. Cover and simmer 10–12 minutes until potatoes are tender.

  • Reduce heat and stir in cream. Simmer 5 minutes uncovered to thicken.

  • Stir in cheese and mustard, if using. Taste and adjust seasoning.

  • Garnish with parsley and serve hot.
