A simple yet flavorful one pan balsamic chicken with a tangy glaze, juicy meat, and roasted vegetables — perfect for quick dinners or elegant meals.
4 boneless, skinless chicken breasts or thighs
Salt and pepper
1 tsp dried Italian herbs
2 tbsp olive oil
3 garlic cloves, minced
1 red onion, thinly sliced
1½ cups cherry tomatoes
2 tbsp balsamic vinegar
1 tbsp honey (or maple syrup)
Fresh basil or parsley for garnish
Season chicken with salt, pepper, and herbs.
Sear in olive oil, 3–4 minutes per side. Set aside.
In the same pan, sauté onion and garlic until softened.
Stir in balsamic vinegar and honey; simmer 2 minutes.
Add tomatoes and return chicken to the pan.
Cook covered on stove for 10 minutes, or roast at 400°F for 15 minutes.
Rest, garnish with basil, and serve warm.
