A simple yet flavorful one pan balsamic chicken with a tangy glaze, juicy meat, and roasted vegetables — perfect for quick dinners or elegant meals.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs

  • Salt and pepper

  • 1 tsp dried Italian herbs

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 red onion, thinly sliced

  • 1½ cups cherry tomatoes

  • 2 tbsp balsamic vinegar

  • 1 tbsp honey (or maple syrup)

  • Fresh basil or parsley for garnish

Instructions

  • Season chicken with salt, pepper, and herbs.

  • Sear in olive oil, 3–4 minutes per side. Set aside.

  • In the same pan, sauté onion and garlic until softened.

  • Stir in balsamic vinegar and honey; simmer 2 minutes.

  • Add tomatoes and return chicken to the pan.

  • Cook covered on stove for 10 minutes, or roast at 400°F for 15 minutes.

  • Rest, garnish with basil, and serve warm.
