4 boneless, skinless chicken breasts or thighs
2 tablespoons olive oil
Salt and pepper, to taste
3 cloves garlic, minced
1 pint cherry tomatoes, halved
1 small red onion, sliced
1/4 cup balsamic vinegar
1 tablespoon honey
Fresh basil or parsley (optional)
Preheat oven to 400°F (200°C).
Season chicken with salt and pepper.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear chicken for 3–4 minutes per side until golden.
Add garlic, tomatoes, and red onion to the skillet.
Mix balsamic vinegar and honey in a small bowl, then pour over chicken and veggies.
