  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 3 cloves garlic, minced

  • 1 pint cherry tomatoes, halved

  • 1 small red onion, sliced

  • 1/4 cup balsamic vinegar

  • 1 tablespoon honey

  • Fresh basil or parsley (optional)

Instructions

  • Preheat oven to 400°F (200°C).

  • Season chicken with salt and pepper.

  • Heat olive oil in an oven-safe skillet over medium-high heat.

  • Sear chicken for 3–4 minutes per side until golden.

  • Add garlic, tomatoes, and red onion to the skillet.

  • Mix balsamic vinegar and honey in a small bowl, then pour over chicken and veggies.

  • Transfer skillet to oven and roast for 12–15 minutes, or until chicken reaches 165°F internally.

  • Let rest for 5 minutes, garnish with herbs, and serve.
