Ingredients (Serves 6–8)

For the Crust (Optional, can use store-bought):

  • 1 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3–4 tbsp ice water

For the Filling:

  • 4 large eggs
  • 1 cup milk (or plant-based milk for a lighter version)
  • 1 cup shredded mozzarella or cheddar
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • 1 small onion, finely diced
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 tsp salt (optional, depending on feta)

Optional Topping:

  • Cherry tomatoes, halved
  • Extra feta or herbs for garnish

Instructions

1. Preheat Oven & Prepare Crust:

  • Preheat oven to 375°F (190°C).
  • If making homemade crust: mix flour and salt, cut in butter until crumbly, add ice water to form dough, roll out, and line a 9-inch pie pan.
  • Blind bake for 8–10 minutes if desired for a firmer crust.

2. Sauté Vegetables:

  • In a skillet over medium heat, sauté onion and garlic until softened.
  • Add chopped spinach and cook until wilted. Remove from heat and let cool slightly.

3. Prepare Egg Mixture:

  • In a bowl, whisk together eggs, milk, oregano, salt, and pepper.

4. Assemble Quiche:

  • Spread sautéed spinach and onion evenly over the crust.
  • Sprinkle mozzarella and feta on top.
  • Pour egg mixture over the filling.

5. Bake:

  • Bake for 30–35 minutes, or until the quiche is set and lightly golden on top.
  • Let cool for 5–10 minutes before slicing.

6. Garnish & Serve:

  • Optional: top with cherry tomatoes, extra feta, or fresh herbs.
  • Serve warm or at room temperature.
