1.5 lbs boneless chicken thighs or breasts
1/4 cup olive oil
Juice of 1 lemon
3 garlic cloves, minced
1 tsp dried oregano
Salt & pepper to taste
4–6 pita breads
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1 cup romaine or arugula
1/2 cup crumbled feta
1 cup tzatziki (store-bought or homemade)
Combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate 20+ minutes.
Grill or sear chicken 5–6 minutes per side until cooked through. Rest, then slice.
Warm pita bread in a skillet or oven.
Spread tzatziki, layer chicken, veggies, feta, and herbs.
Wrap and serve warm.
