2 cups egg whites
4 fully cooked chicken sausage links, sliced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
1 small red onion, diced
2 cups baby spinach
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt and pepper to taste
Chop all vegetables and chicken sausage.
Heat olive oil in a large skillet over medium heat.
Add bell peppers and onion, sauté for 6–8 minutes.
Stir in sausage and cook 4–5 minutes more.
Add spinach and cook until wilted, about 1–2 minutes.
