2 bagels, sliced
1 cup cooked chicken, shredded
1 tablespoon maple syrup
4 large eggs
1 tablespoon milk or water
1 cup shredded sharp cheddar
2 teaspoons butter
Salt and pepper, to taste
Warm the chicken in a skillet with butter. Drizzle in maple syrup and toss to coat.
Toast buttered bagel halves in a skillet, cut-side down, until golden brown.
Whisk eggs with milk, salt, and pepper. Scramble gently in a nonstick pan over medium-low heat.
Layer eggs, maple chicken, and cheddar on the bottom bagel halves. Add the tops.
Return assembled sandwiches to the skillet. Cover and heat until cheese is melted, about 3–4 minutes.
