Hot Honey Chicken Power Bowl is a balanced bowl-style meal featuring caramelized sweet and spicy chicken, hearty grains, roasted vegetables, and fresh toppings layered for bold flavor and satisfying texture.
1 1/2 pounds boneless skinless chicken thighs or breasts
1/2 cup hot honey
2 cups cooked brown rice or quinoa
2 medium sweet potatoes peeled and cubed
1 tablespoon olive oil plus 1 tablespoon for chicken
1 teaspoon salt divided
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 cup cherry tomatoes halved
1 cup shredded red cabbage
1 cucumber sliced
1 avocado sliced
1/2 cup plain Greek yogurt
1 tablespoon lime juice
2 tablespoons chopped fresh cilantro
Preheat oven to 400°F.
Toss sweet potatoes with 1 tablespoon olive oil and half the salt and pepper. Roast for 20 to 25 minutes until tender and golden.
Season chicken with remaining salt, pepper, garlic powder, and smoked paprika.
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook chicken 5 to 7 minutes per side until nearly cooked through.
Reduce heat to medium-low and brush hot honey over chicken. Cook 1 to 2 minutes, turning to coat until glaze thickens and chicken reaches safe internal temperature.
Let chicken rest for 5 minutes, then slice.
Mix Greek yogurt with lime juice.
Divide cooked grains among bowls. Top with roasted sweet potatoes, sliced chicken, tomatoes, cabbage, cucumber, and avocado.
Drizzle with remaining hot honey and spoon yogurt sauce over the top. Sprinkle with cilantro before serving.
