Hot Honey Chicken Power Bowl is a balanced bowl-style meal featuring caramelized sweet and spicy chicken, hearty grains, roasted vegetables, and fresh toppings layered for bold flavor and satisfying texture.

1 1/2 pounds boneless skinless chicken thighs or breasts
1/2 cup hot honey
2 cups cooked brown rice or quinoa
2 medium sweet potatoes peeled and cubed
1 tablespoon olive oil plus 1 tablespoon for chicken
1 teaspoon salt divided
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 cup cherry tomatoes halved
1 cup shredded red cabbage
1 cucumber sliced
1 avocado sliced
1/2 cup plain Greek yogurt
1 tablespoon lime juice
2 tablespoons chopped fresh cilantro

Instructions

  • Preheat oven to 400°F.

  • Toss sweet potatoes with 1 tablespoon olive oil and half the salt and pepper. Roast for 20 to 25 minutes until tender and golden.

  • Season chicken with remaining salt, pepper, garlic powder, and smoked paprika.

  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook chicken 5 to 7 minutes per side until nearly cooked through.

  • Reduce heat to medium-low and brush hot honey over chicken. Cook 1 to 2 minutes, turning to coat until glaze thickens and chicken reaches safe internal temperature.

  • Let chicken rest for 5 minutes, then slice.

  • Mix Greek yogurt with lime juice.

  • Divide cooked grains among bowls. Top with roasted sweet potatoes, sliced chicken, tomatoes, cabbage, cucumber, and avocado.

  • Drizzle with remaining hot honey and spoon yogurt sauce over the top. Sprinkle with cilantro before serving.
