1.5 lbs boneless chicken breast or thighs, sliced
1/4 cup honey
3 garlic cloves, minced
2 tbsp soy sauce
Juice of 1 lime
1 tbsp olive oil
1 red onion, sliced
3 bell peppers (mixed colors), sliced
3 cups cooked long-grain rice
1 tsp cumin
1 tsp smoked paprika
1 tsp chili powder
Salt and black pepper to taste
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup shredded mozzarella cheese
Fresh parsley or cilantro for garnish (optional)
In a bowl, mix honey, garlic, soy sauce, and lime juice. Add chicken and marinate 15–30 minutes.
Heat oil in a skillet and cook onion and peppers until tender-crisp. Set aside.
In the same skillet, cook chicken and marinade until fully cooked and sauce thickens.
In a large bowl, combine rice, cooked vegetables, chicken, and spices. Stir well.
Pour mixture into a greased 9×13 baking dish and top with cheeses.
Cover with foil and bake at 375°F for 20 minutes.
Remove foil and broil for 3–5 minutes until cheese browns.
Let rest 5 minutes. Garnish and serve warm.
