A bold and satisfying high-protein salad made with grilled chicken, black beans, fresh veggies, and a creamy Greek yogurt lime dressing — perfect for meal prep or light dinners.
1.5 lbs boneless, skinless chicken breast
2 tbsp olive oil
Juice of 1 lime
1 tsp chili powder
1 tsp smoked paprika
1 tsp garlic powder
½ tsp cumin
Salt and pepper to taste
6 cups romaine lettuce, chopped
1 cup black beans, rinsed and drained
1 cup sweet corn kernels (grilled or canned)
1 cup cherry tomatoes, halved
1 red bell pepper, diced
¼ red onion, thinly sliced
1 avocado, cubed
½ cup shredded cheese (optional)
Greek Yogurt Lime Dressing:
½ cup plain non-fat Greek yogurt
Juice of 1 lime
1 small garlic clove, grated
1 tbsp chopped cilantro
½ tsp honey (optional)
Salt and pepper to taste
Marinate chicken in oil, lime juice, and spices for at least 30 minutes.
Grill or cook chicken until done; slice after resting.
Prepare salad components and mix the dressing.
In bowls, layer greens, beans, corn, veggies, chicken, avocado, and cheese.
