Tender garlic butter beef bites slow-cooked to perfection in a rich, savory sauce. High in protein, easy to make, and perfect for meal prep or weeknight dinners.
2–3 lbs beef chuck roast, cubed
6 garlic cloves, minced
½ cup beef broth
4 tbsp unsalted butter (plus 1–2 tbsp optional)
1 tsp onion powder
1 tsp paprika
Salt and black pepper to taste
Fresh thyme or rosemary (optional)
Season beef with salt, pepper, onion powder, and paprika.
Optional: Sear beef in a hot skillet until browned.
Place beef in slow cooker. Add garlic, broth, butter, and herbs.
Cook on LOW 6–7 hrs or HIGH 3–4 hrs, until fork-tender.
Stir gently and finish with more butter, lemon juice, or Parmesan if desired.
Serve hot over mashed cauliflower, rice, or vegetables.
