A wholesome Mediterranean steak bowl made with marinated grilled steak, fresh veggies, whole grains, and creamy hummus or tzatziki. Perfect for a balanced, flavor-packed meal.

Ingredients

  • 1 lb flank or sirloin steak

  • 3 tbsp olive oil

  • Juice of 1 lemon

  • 2 cloves garlic, minced

  • 1 tsp dried oregano

  • Salt and black pepper to taste

  • 2 cups cooked quinoa, farro, or brown rice

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 red onion, thinly sliced

  • 1/3 cup Kalamata olives, sliced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup fresh parsley or mint, chopped

  • 1/2 cup hummus or tzatziki

  • 2 cups greens (arugula, spinach, or romaine)

  • Optional: 1 avocado, sliced

Instructions

  • Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate steak for 30 minutes to 4 hours.

  • Cook grains and set aside.

  • Prep vegetables and herbs.

  • Grill steak over medium-high heat for 3–5 minutes per side. Let rest, then slice thinly.

  • Assemble bowls with grains, greens, steak, vegetables, feta, and hummus/tzatziki. Drizzle with olive oil and sprinkle herbs.
