A flavorful, protein-packed Greek-inspired bowl layered with grilled chicken, whole grains, crunchy vegetables, hummus, and tzatziki. Ideal for meal prep or clean eating.
1.5 lbs chicken breast, sliced
2 tbsp olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 tsp dried oregano
Salt and pepper
2 cups cooked brown rice or quinoa
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 red onion, thinly sliced
1/3 cup Kalamata olives, halved
1 cup hummus
1 cup tzatziki
2 tbsp chopped parsley or dill (optional)
Marinate chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.
Grill or sear chicken on medium-high heat until cooked through. Let rest, then slice.
Cook grain of choice and let cool slightly.
Prepare vegetables and toppings.
In each bowl, layer grain, chicken, cucumber, tomato, onion, and olives.
Top with hummus, tzatziki, and herbs.
