A flavorful, protein-packed Greek-inspired bowl layered with grilled chicken, whole grains, crunchy vegetables, hummus, and tzatziki. Ideal for meal prep or clean eating.

Ingredients

  • 1.5 lbs chicken breast, sliced

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 2 garlic cloves, minced

  • 1 tsp dried oregano

  • Salt and pepper

  • 2 cups cooked brown rice or quinoa

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1/2 red onion, thinly sliced

  • 1/3 cup Kalamata olives, halved

  • 1 cup hummus

  • 1 cup tzatziki

  • 2 tbsp chopped parsley or dill (optional)

Instructions

  • Marinate chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.

  • Grill or sear chicken on medium-high heat until cooked through. Let rest, then slice.

  • Cook grain of choice and let cool slightly.

  • Prepare vegetables and toppings.

  • In each bowl, layer grain, chicken, cucumber, tomato, onion, and olives.

  • Top with hummus, tzatziki, and herbs.
