2 pounds carrots, peeled and sliced
3 tablespoons unsalted butter
3 tablespoons brown sugar
1 tablespoon honey or maple syrup (optional)
½ teaspoon salt
¼ teaspoon ground cinnamon or nutmeg (optional)
1 tablespoon chopped fresh parsley (for garnish)
Peel and slice carrots into uniform pieces.
Boil or steam carrots until just tender, about 6–8 minutes. Drain and set aside.
In a large skillet, melt butter over medium heat. Add brown sugar and honey, stirring until dissolved.
Add salt and spices (if using). Stir to combine.
Add cooked carrots and toss to coat evenly in the glaze.
Cook on low heat for 4–6 minutes, stirring occasionally until the glaze thickens.
Garnish with chopped parsley and serve warm.
