6 bone-in skin-on chicken thighs
1/2 cup light or dark brown sugar
4 garlic cloves finely minced
2 tablespoons olive oil
2 tablespoons low-sodium soy sauce
1 tablespoon apple cider vinegar
1 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 tablespoon chopped fresh parsley optional

Instructions

  • Preheat oven to 400°F.

  • Pat chicken thighs dry with paper towels and place skin side up in a baking dish.

  • In a bowl combine brown sugar garlic olive oil soy sauce vinegar paprika pepper and salt until blended.

  • Spoon mixture evenly over each chicken thigh.

  • Roast for 35 to 45 minutes until internal temperature reaches 165°F.

  • During the final 10 minutes baste chicken with pan juices.

  • Broil for 2 to 3 minutes if deeper caramelization is desired watching carefully.

  • Rest for 5 to 10 minutes before serving.

  • Spoon thickened pan sauce over chicken and garnish with parsley if desired.
