Fiesta Chicken Crock Pot Recipe is a slow-cooked meal made with tender shredded chicken, beans, corn, and salsa in a flavorful sauce.
2 pounds boneless, skinless chicken breasts
1 packet taco seasoning
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) corn, drained
1 can (14.5 ounces) diced tomatoes
1 cup salsa
4 ounces cream cheese (optional)
Lightly grease the crock pot.
Place chicken in an even layer and season with taco seasoning.
Add beans, corn, tomatoes, and salsa on top.
Cook on low for 6–7 hours or high for 3–4 hours.
Shred chicken and stir.
Add cream cheese if using and stir until smooth.
