1 cup rice (white or brown), cooked
1 lb ground beef or turkey
1 tbsp oil
2 tbsp taco seasoning
¼ cup water
1 cup shredded lettuce
1 cup diced tomatoes
1 avocado, cubed
1 cup shredded cheese
½ cup salsa or pico de gallo
¼ cup sour cream or Greek yogurt
Lime wedges, cilantro for garnish
Cook rice according to package directions.
In a skillet, sauté ground meat in oil. Add taco seasoning and water. Simmer until thickened.
Prep toppings: chop lettuce, tomatoes, avocado, and shred cheese.
