Easy Taco Rice Bowls are a quick and customizable dinner made with seasoned ground meat, fluffy rice, and fresh toppings. A healthy, satisfying meal ready in under 30 minutes.
1 cup uncooked white or brown rice
1 tbsp olive oil
1 lb ground beef or turkey
2 tbsp taco seasoning
¼ cup water
Optional: ½ cup black beans, ½ cup corn
Toppings:
Shredded lettuce
Diced tomatoes or salsa
Avocado or guacamole
Shredded cheese
Sour cream or Greek yogurt
Jalapeños
Cilantro
Lime wedges
Cook rice according to package instructions.
Heat oil in a skillet. Add ground meat and cook until browned.
Add taco seasoning and water. Simmer 3–4 minutes.
Optional: Stir in beans, corn, or veggies.
