A creamy, cheesy one-pot pasta dish made with seasoned ground beef, tender macaroni, and a homemade sauce — better than the box!
1 lb ground beef (80/20 or lean)
1 small yellow onion, finely chopped
2 cloves garlic, minced
2 tbsp tomato paste
2 cups beef broth (low sodium)
1 cup whole milk
2 cups elbow macaroni (uncooked)
1 ½ cups shredded sharp cheddar cheese
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
Optional: pinch of cayenne
In a large skillet, brown ground beef over medium heat. Drain excess fat if needed.
Add onion and cook for 2–3 minutes. Stir in garlic and cook 30 seconds.
Add tomato paste and seasonings. Stir and cook for 1–2 minutes.
Pour in beef broth, milk, and macaroni. Stir well, bring to a simmer.
Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender.
Turn off heat. Stir in shredded cheese until smooth and creamy.
Let rest 5 minutes before serving.
