A light and creamy one-pot pasta with juicy chicken, garlic, and Parmesan cheese. A healthy, comforting dinner that’s quick enough for busy weeknights.

Ingredients

  • 1 lb boneless, skinless chicken breast (cubed)

  • 2 tbsp olive oil

  • 46 garlic cloves, minced

  • Salt and pepper to taste

  • 8 oz whole wheat penne or rotini

  • 2½ cups low-sodium chicken broth

  • 1 cup milk (or ½ cup half-and-half)

  • ¾ cup freshly grated Parmesan

  • Optional: lemon juice, parsley for garnish

Instructions

  1. Heat 1 tbsp olive oil in skillet. Sear chicken with salt, pepper, and garlic powder until cooked through. Remove and set aside.

  2. Add garlic and sauté 1 minute. Pour in broth, milk, and pasta.

  3. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.

  4. Stir in Parmesan and return chicken to pan. Simmer 2 minutes more.

  5. Garnish with parsley or lemon juice. Serve warm.
