Juicy pan-seared chicken simmered in a rich garlic butter sauce — a quick and flavorful dinner perfect for any night of the week.
4 boneless, skinless chicken breasts or thighs
4 tablespoons unsalted butter, divided
1 tablespoon olive oil
5 garlic cloves, minced
½ cup low-sodium chicken broth
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt and black pepper, to taste
1 tablespoon lemon juice
Optional: chopped parsley for garnish
Slice chicken breasts into cutlets. Season with salt, pepper, paprika, and Italian seasoning.
Heat 1 tbsp olive oil and 1 tbsp butter in a skillet over medium-high heat.
Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
Lower heat. Add remaining butter and garlic. Cook 1 minute until fragrant.
Pour in broth and scrape browned bits from pan. Simmer 3–5 minutes.
Stir in lemon juice, return chicken to pan, and simmer 2–3 minutes more.
Spoon sauce over chicken, garnish with parsley, and serve hot.
