Cheesy, flavorful ground beef enchiladas wrapped in soft tortillas and baked in a zesty red sauce. A quick and satisfying one-pan family dinner.

  • 1 lb ground beef (85/15)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp taco seasoning

  • ¼ cup water

  • 2 cups red enchilada sauce (divided)

  • 68 flour tortillas

  • 2 cups shredded Mexican blend cheese

  • 1 tbsp olive oil

  • Optional toppings: sour cream, cilantro, green onions, diced tomatoes

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large oven-safe skillet, heat olive oil and sauté ground beef with onion and garlic until browned.

  3. Add taco seasoning and water. Simmer 2–3 minutes. Stir in 1 cup enchilada sauce and remove from heat.

  4. Fill tortillas with beef mixture and cheese. Roll and place seam-side down in skillet.

  5. Pour remaining sauce over the top. Sprinkle with cheese.

  6. Cover with foil and bake 20 minutes. Uncover and bake 5–7 minutes more.

  7. Garnish with toppings and serve hot.
