1½ lbs chicken breasts, cut into strips
½ cup all-purpose flour
2 eggs
1 tbsp milk or Dijon mustard (optional)
1½ cups panko breadcrumbs
½ cup regular breadcrumbs
¼ cup grated Parmesan (optional)
½ tsp paprika
½ tsp garlic powder
Salt & pepper
Cooking spray or olive oil
Preheat oven to 425°F. Line baking sheet with parchment or place rack on top.
Set up 3 bowls: flour, beaten eggs, and breadcrumb mixture.
Dredge chicken in flour, egg, then breadcrumbs. Press coating firmly.
Place on baking sheet. Spray with oil.
Bake 20–22 minutes, flipping halfway, until golden and cooked through.
Serve with dipping sauce of choice.
