Creamy Tuscan Garlic Chicken is a skillet dinner featuring golden seared chicken breasts simmered in a rich garlic cream sauce with sun-dried tomatoes, spinach, and Parmesan cheese.

4 boneless skinless chicken breasts
Salt to taste
Freshly ground black pepper to taste
2 tablespoons olive oil
2 tablespoons butter
5 cloves garlic minced
1 cup chicken broth
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes chopped
2 cups fresh spinach
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes

Instructions

  • Season chicken breasts with salt and pepper.

  • Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.

  • Sear chicken 4 to 5 minutes per side until golden brown, then remove and set aside.

  • Reduce heat to medium and add remaining butter and minced garlic. Cook 30 seconds.

  • Pour in chicken broth and scrape up browned bits.

  • Stir in heavy cream and simmer 5 to 7 minutes until slightly thickened.

  • Add sun-dried tomatoes and Italian seasoning.

  • Return chicken to skillet and simmer 8 to 10 minutes until cooked through.

  • Stir in Parmesan and spinach until melted and wilted.

  • Adjust seasoning and serve warm.
