Creamy Tuscan Garlic Chicken is a skillet dinner featuring golden seared chicken breasts simmered in a rich garlic cream sauce with sun-dried tomatoes, spinach, and Parmesan cheese.
4 boneless skinless chicken breasts
Salt to taste
Freshly ground black pepper to taste
2 tablespoons olive oil
2 tablespoons butter
5 cloves garlic minced
1 cup chicken broth
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes chopped
2 cups fresh spinach
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
Season chicken breasts with salt and pepper.
Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.
Sear chicken 4 to 5 minutes per side until golden brown, then remove and set aside.
Reduce heat to medium and add remaining butter and minced garlic. Cook 30 seconds.
Pour in chicken broth and scrape up browned bits.
Stir in heavy cream and simmer 5 to 7 minutes until slightly thickened.
Add sun-dried tomatoes and Italian seasoning.
Return chicken to skillet and simmer 8 to 10 minutes until cooked through.
Stir in Parmesan and spinach until melted and wilted.
Adjust seasoning and serve warm.
