A creamy, hearty soup packed with ground beef, potatoes, beans, corn, and tomatoes in a rich, comforting broth — perfect for cozy nights and one-pot dinners.

Ingredients

  • 1 lb ground beef

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 23 russet potatoes, diced

  • 1 can corn, drained

  • 1 can diced tomatoes

  • 1 can Rotel (tomatoes with green chilies)

  • 1 can pinto or kidney beans, drained

  • 4 cups beef broth

  • 4 oz cream cheese, cubed

  • ½ cup heavy cream or milk

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • Salt and black pepper, to taste

Instructions

  • Brown beef in a large pot. Add onion and garlic; cook until softened.

  • Stir in potatoes, corn, tomatoes, Rotel, beans, broth, and spices.

  • Simmer 15–20 minutes until potatoes are tender.

  • Add cream cheese and cream. Stir until smooth and creamy.

  • Adjust seasoning and serve with toppings of choice.
