A spicy, creamy one-pot pasta loaded with smoky sausage, bold Cajun flavor, and a rich Parmesan cream sauce — ready in 30 minutes.

Ingredients

  • 12 oz smoked sausage (Andouille or kielbasa), sliced

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 1 red bell pepper, diced

  • 3 cloves garlic, minced

  • 1 tbsp Cajun seasoning

  • 1 tbsp tomato paste

  • 2½ cups chicken broth

  • 8 oz short pasta (penne, rotini, or bowties)

  • ½ cup heavy cream

  • ½ cup freshly grated Parmesan cheese

  • Salt and pepper to taste

  • Optional: chopped parsley, extra cheese for garnish

Instructions

  • In a large pot, heat olive oil over medium heat. Add sausage and cook until browned. Remove and set aside.

  • Sauté onion and bell pepper for 3–4 minutes. Add garlic and cook for 30 seconds.

  • Stir in tomato paste and Cajun seasoning. Cook for 1 minute.

  • Add pasta and chicken broth. Bring to a boil, then simmer uncovered for 12–14 minutes, stirring occasionally.

  • Stir in cream and Parmesan. Return sausage to pot. Simmer until thickened, about 2–3 minutes.

  • Taste and adjust seasoning. Serve hot, garnished with parsley or extra cheese.
