A spicy, creamy one-pot pasta loaded with smoky sausage, bold Cajun flavor, and a rich Parmesan cream sauce — ready in 30 minutes.
12 oz smoked sausage (Andouille or kielbasa), sliced
1 tbsp olive oil
1 small onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
1 tbsp Cajun seasoning
1 tbsp tomato paste
2½ cups chicken broth
8 oz short pasta (penne, rotini, or bowties)
½ cup heavy cream
½ cup freshly grated Parmesan cheese
Salt and pepper to taste
Optional: chopped parsley, extra cheese for garnish
In a large pot, heat olive oil over medium heat. Add sausage and cook until browned. Remove and set aside.
Sauté onion and bell pepper for 3–4 minutes. Add garlic and cook for 30 seconds.
Stir in tomato paste and Cajun seasoning. Cook for 1 minute.
Add pasta and chicken broth. Bring to a boil, then simmer uncovered for 12–14 minutes, stirring occasionally.
Stir in cream and Parmesan. Return sausage to pot. Simmer until thickened, about 2–3 minutes.
Taste and adjust seasoning. Serve hot, garnished with parsley or extra cheese.
