Quick-seared steak bites tossed in a bold cowboy butter sauce made with garlic, lemon, Dijon, and herbs. A fast, flavorful dish that works as an appetizer or main course.
1.5 lbs sirloin steak, cut into 1-inch cubes
Salt and pepper, to taste
1 tbsp olive oil
4 tbsp unsalted butter
3 garlic cloves, minced
1 tbsp Dijon mustard
1 tbsp lemon juice, freshly squeezed
1/4 tsp crushed red pepper flakes
2 tbsp chopped parsley
1 tbsp chopped chives
Pat steak dry and season with salt and pepper.
Heat oil in a skillet over high heat.
Sear steak in batches, 1½–2 minutes per side. Set aside.
Reduce heat to medium. Melt butter in skillet.
Add garlic; cook 30 seconds.
Stir in mustard, lemon juice, red pepper flakes, salt, and pepper. Simmer briefly.
Return steak to pan, toss to coat.
Add herbs, toss again, and serve hot.
