Classic Beef Chili (Hearty Meat Chili) is a rich, slow-simmered beef and bean chili with tomatoes and warming spices, perfect for comforting dinners and gatherings.
2 pounds ground beef 80/20
1 medium yellow onion diced
3 cloves garlic minced
2 tablespoons tomato paste
1 can 28 ounces crushed tomatoes
1 can 15 ounces kidney beans drained and rinsed
1 cup beef broth
2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Brown the ground beef in a large pot over medium heat for 7 to 10 minutes.
Drain excess fat, leaving about 1 tablespoon in the pot.
Add diced onion and cook 4 to 5 minutes until softened.
Stir in garlic and cook 30 seconds.
Add tomato paste and cook 1 to 2 minutes.
Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper.
Add crushed tomatoes and beef broth, stirring well.
Add kidney beans and bring to a gentle simmer.
Cover partially and cook 45 to 90 minutes, stirring occasionally.
Adjust seasoning and thickness before serving.
