This breakfast pizza features a crispy hash brown crust topped with scrambled eggs, chicken sausage, melted cheese, and sautéed veggies. A perfect all-in-one dish for brunch or meal prep.

Ingredients

3 cups thawed frozen hash browns
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cooked chicken sausage links, sliced
1/2 cup diced bell pepper
1/4 cup chopped onion
6 large eggs
1/4 cup milk or cream
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Optional: chopped herbs, hot sauce, green onions

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment.

  • Press hash browns into a 10–12 inch round on the sheet. Drizzle with oil and season.

  • Bake for 20–25 minutes until crust is golden and edges are crisp.

  • Brown the sausage in a skillet and set aside.

  • Sauté bell peppers and onions until soft.

  • Beat eggs with milk and seasonings, then gently scramble until just set.

  • Top the crust with eggs, sausage, and veggies. Sprinkle cheese over everything.

  • Return to the oven for 8–10 minutes until cheese is melted.

  • Let cool briefly before slicing and serving.
