This breakfast pizza features a crispy hash brown crust topped with scrambled eggs, chicken sausage, melted cheese, and sautéed veggies. A perfect all-in-one dish for brunch or meal prep.
3 cups thawed frozen hash browns
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cooked chicken sausage links, sliced
1/2 cup diced bell pepper
1/4 cup chopped onion
6 large eggs
1/4 cup milk or cream
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Optional: chopped herbs, hot sauce, green onions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Press hash browns into a 10–12 inch round on the sheet. Drizzle with oil and season.
Bake for 20–25 minutes until crust is golden and edges are crisp.
Brown the sausage in a skillet and set aside.
Sauté bell peppers and onions until soft.
Beat eggs with milk and seasonings, then gently scramble until just set.
Top the crust with eggs, sausage, and veggies. Sprinkle cheese over everything.
Return to the oven for 8–10 minutes until cheese is melted.
Let cool briefly before slicing and serving.
