A warm, savory breakfast casserole made with everything bagels, chicken sausage, and melty cheddar cheese. Great for brunch or weekly meal prep.
4 everything bagels, cubed
12 oz cooked chicken sausage, sliced
8 eggs
1 cup whole milk
1/4 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup diced red bell pepper
1/2 cup diced onion
1 tbsp butter or non-stick spray
Salt and pepper to taste
Preheat oven to 375°F. Grease a 9×13-inch baking dish.
Brown chicken sausage in a skillet over medium heat, 5–7 minutes.
Toast cubed bagels if fresh.
Sauté diced peppers and onions until softened, 4–5 minutes.
Whisk eggs, milk, cream, salt, and pepper in a bowl. Stir in half the cheese.
Layer bagels, sausage, and veggies in the baking dish.
Pour egg mixture over the top and press gently to soak.
Sprinkle remaining cheese over the casserole.
Let rest 20–30 minutes (or refrigerate overnight).
Bake uncovered for 40–45 minutes until golden and set. Let cool before serving.
