A warm, savory breakfast casserole made with everything bagels, chicken sausage, and melty cheddar cheese. Great for brunch or weekly meal prep.

Ingredients

4 everything bagels, cubed
12 oz cooked chicken sausage, sliced
8 eggs
1 cup whole milk
1/4 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup diced red bell pepper
1/2 cup diced onion
1 tbsp butter or non-stick spray
Salt and pepper to taste

Instructions

  • Preheat oven to 375°F. Grease a 9×13-inch baking dish.

  • Brown chicken sausage in a skillet over medium heat, 5–7 minutes.

  • Toast cubed bagels if fresh.

  • Sauté diced peppers and onions until softened, 4–5 minutes.

  • Whisk eggs, milk, cream, salt, and pepper in a bowl. Stir in half the cheese.

  • Layer bagels, sausage, and veggies in the baking dish.

  • Pour egg mixture over the top and press gently to soak.

  • Sprinkle remaining cheese over the casserole.

  • Let rest 20–30 minutes (or refrigerate overnight).

  • Bake uncovered for 40–45 minutes until golden and set. Let cool before serving.
