A filling and flavorful breakfast casserole with layers of hash browns, seasoned chicken, fluffy eggs, and two types of cheese. Great for brunch or meal prep.

Ingredients

4 cups hash browns (thawed if frozen)
2 cups cooked chicken, chopped or shredded
6 eggs
1 cup milk or half-and-half
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/4 cup chopped green onions or chives
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
Optional: 1 cup chopped bell peppers, spinach, or other vegetables

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  • Spread hash browns evenly across the bottom and press lightly.

  • Layer chicken over the potatoes.

  • Add optional vegetables if using.

  • Sprinkle with most of the cheese, saving some for the top.

  • Whisk eggs with milk, salt, pepper, and garlic powder.

  • Pour the egg mixture evenly over the casserole.

  • Top with remaining cheese.

  • Bake for 45–50 minutes, until golden and set in the middle.

  • Rest for 10 minutes before slicing and serving.
